Frikkadel & tomato salad with creamy feta dressing

Frikkadel & Tomato Salad

Olive oil, for frying

Eskort Mini Frikkadels

4 large jam tomatoes, quartered

250ml (1c) leeks, chopped

1 garlic clove, crushed

salt and pepper to taste

60ml (¼c) mixed seeds

Juice from one lemon

500ml (2c) whole cherry tomatoes

Creamy Feta Dressing

250ml (1c) double thick yoghurt

125ml (½c) feta

1 garlic clove, crushed

Black pepper, to taste

Juice of ½ a lemon

To Serve

Micro herbs for garnishing



  • Pour olive oil into a large frying pan over moderate heat.
  • Fry the frikkadels, tomatoes, leeks and garlic until the tomato skins soften. Season with salt and pepper.
  • Dish the frikkadels and tomatoes from the pan into a serving bowl.
  • In the same pan, toast the mixed seeds until golden, then remove from the heat.
  • Drizzle lemon juice over the frikkadel salad, add the cherry tomatoes and toasted seeds.


  • Whip all the ingredients together in a mixing bowl.

To Serve

  • Spoon the dressing over the frikkadel salad and garnish with fresh micro herbs.
