KOO chilli con carne
Serves 4 | Preparation: 15 min | Cooking: 45 min
60ml (4T) sunflower oil
2 medium onions, chopped
500g lean beef mince
3 garlic cloves, peeled and finely chopped
2 red chillies, chopped
5ml (1t) cayenne pepper
10ml (2t) ground coriander
500ml (2c) beef stock
1 can (410g) diced peeled tomatoes
1 can (410g) KOO Baked Beans in Tomato Sauce (or your favourite flavour of KOO Baked Beans)
1 can (410g) KOO Black Beans in Mexican Style Sauce
45ml (3T) KOO Tomato Paste
15ml (1T) sugar
5ml (1t) dried oregano
2 bay leaves
salt and freshly ground black pepper
- In a large saucepan heat the oil and fry the onions and mince until the mince is brown, about 5 minutes. Stir the mince and break up lumps with a wooden spoon.
- Add the garlic, chillies, cayenne pepper and coriander, and fry for 2 minutes.
- Add the stock, tomatoes, KOO Baked Beans, KOO Black Beans, KOO Tomato Paste, sugar, oregano and bay leaves. Season with the salt and freshly ground black pepper.
- Bring to a simmer, cover with a lid and cook gently for 45 minutes, stirring occasionally until the mince is tender and the sauce is thick.
Serve over rice and garnish with fresh herbs and chopped chilli.
