Most of us eat beef and chicken and keep some of this in the freezer. But have you considered pork? South African pork is much more affordable, and the meat has a neutral flavour which lends itself to both savoury and sweet combinations. It can also combine with a variety of spices, herbs and flavours that can be cooked and served in innovative and delicious ways.

Some herbs that work well with pork include rosemary, sage, marjoram and coriander. Add some garlic and ginger or bake it with apples for a meal with sweet and sour flavours. You can add almost any starch – potatoes, rice and noodles are all great combinations you could serve with pork. Sauces that combine well range from home-made glazes with as little as two ingredients (marmalade and olive oil or soya sauce and honey) to any type of mustard (sweet mustard made from mustard powder and condensed milk is always a hit) or a basic barbecue sauce.
But the best way to discover your favourite pork recipe is to start experimenting. And one of the best recipes to try is pulled pork. Like the meat itself, this recipe is versatile too – serve it with wraps like the recipe below, then freeze the leftovers and use it to make pork pies, pork burgers or just serve it with potato salad and a good sauce.
PULLED PORK SHOULDER WITH WRAPS AND APPLE SLAW
PREP: 30 MIN PLUS 10 MIN AT THE END TO SHRED
COOKING: ABOUT 2 HR
salt and pepper to taste
1,5kg pork shoulder, skin on
1 large onion, roughly chopped
3 cloves garlic, chopped
1 green apple, pips removed and chopped
175ml Chinese barbecue sauce
100ml white or brown grape vinegar
175ml soy sauce
1 tin (410g) tomato puree
10ml (2t) sugar
400ml chicken stock
75-500ml apple slaw (coleslaw with thin strips of apples in it)
mayonnaise to drizzle over the wraps
chopped, fresh green herbs for garnish and extra flavour
- Preheat the oven to 180°C.
- Rub the salt and pepper into the pork.
- Place the onion, garlic and apple in a greased oven-roasting pan and place the pork on top.
- Mix the barbecue sauce, vinegar, soy sauce, tomato puree, sugar and chicken stock then pour it into the oven-roasting pan.
- Cover with foil (shiny side towards the meat) or a tight-fitting lid and place in the centre of the oven.
- Bake for approximately 1 hour and 45 minutes. Test to see if the pork is tender. If not, bake for another 15-20 minutes. Remove from oven and allow to rest for 10-15 minutes.
- Shred the pork with two forks. Also shred and cut the skin also into small pieces and mix into the shredded meat.
- Place spoonfuls of the warm pulled pork and a small amount of apple slaw on each wrap, roll up and finish off with a drizzle of mayonnaise and a sprinkling of fresh herbs.
