Zesty dinner wraps with za’atar frikkadel soup



Za’atar frikkadel soup

45ml (3T) olive oil, for cooking 

1 onion, chopped 

2 garlic cloves, chopped 

45ml (3T) fresh sage, chopped 

10ml (2t) za’atar spice 

350g Eskort Mini Frikkadels

1l (4c) water

45ml (3T) vegetable stock  

Zesty dinner wraps

4 large wraps 

60ml (¼c) butter, melted 

Zest from one lemon 

To serve

2 handfuls baby spinach 

5ml (1t) salt and pepper 


Za’atar frikkadel soup

  • Heat the olive oil in a large saucepan.
  • Fry the onion, garlic, sage and za’atar spice until the onions are glossy. 
  • Add the mini frikkadels and fry for a further five minutes. 
  • Pour in water and vegetable stock, and allow to simmer for 10 minutes. 

Zesty dinner wraps

  • Heat a frying pan over moderate heat.
  • Brush the wraps with melted butter and fry until golden. 
  • Add the lemon zest to the wrap after frying.

To serve

  • Serve with fresh baby spinach and season with salt and pepper.
