Bacon and avocado rolls

Preheat the oven to 200°C. Place the bacon on a rack with a drip tray and grill for 10 minutes until crisp.

Halve the rolls and butter (You can opt to not butter the rolls for a healthier version).

Once the bacon is crisp, chop and mix with the avocado and cherry tomatoes.

Sprinkle the cheese over the fillings and place back into the oven for 5 minutes or until the the cheese is melted.

Close the rolls gently and serve with a green salad.
