Preheat the oven to 200°C. Keep a baking sheet handy.
1 Veggies Heat the oil in a large pot and fry the onion and garlic for a minute or so. Add the carrots, butternut and water and simmer for 15 minutes, stirring every few minutes.
2 Add the stew base and cauliflower and simmer for 10 minutes or until the butternut is cooked.
