We’ve flavoured this dessert with chamomile tea, known for its calming effects.

Preheat the oven to 160°C. Put a tea towel in a deep ovenproof dish and keep 4 ramekins handy.

1. Syrup Put the sugar and water in a small saucepan. Break open the chamomile teabags and add the contents.
