This dish is jam-packed with wholesome goodness, but even my most difficult customer, baby Ntando aka “our baby”, loves this and it’s one of her fave meals. My “squad” also love rolling the meatballs (to which I have added lots of veggies) into shape and helping me with them. I mix the spaghetti with baby marrow “spaghetti” to up the veggie content of these spaghetti meals in the least detectable way!
Preheat the oven to 200°C and lightly grease a baking tray with oil. Make the tomato relish.
1. Spaghetti To cook the pasta, place the spaghetti in hot water in a large saucepan with a pinch of salt. Bring to the boil and cook for 12 minutes until al dente. Drain off the water and set the pasta aside in another bowl. Drizzle half the oil over so that it doesn’t stick together. Toss gently until well coated.
