Ingredients
- - CHICKEN
- 4 - chicken thighs
- - salt
- - chicken spice
- - mayonnaise
- - DRESSING
- 180ml - plain yoghurt
- 60ml - mayonnaise
- - the grated zest and juice of 1 orange
- - SALAD
- 125g - fresh rocket
- 3bunch - of red or green grapes
- 1 - apple, thinly sliced
- 3-4 - celery sticks, sliced into ribbons with a potato peeler
- 60ml - raisins or cranberries
- - a handful of chopped walnuts
Method
Preheat the oven to 190°C.
1 Chicken Arrange the chicken thighs on a baking sheet and season with salt and chicken spice. Spread a little mayonnaise over. Roast for 30-40 minutes or until cooked and the skin is a little crispy (this can also be done in an air fryer). Remove the bones and cut the thighs into large pieces. Set aside to cool.
2 Dressing Mix all the ingredients well.
3 Salad Arrange the rocket on a platter, add the other ingredients and the chicken and serve with the dressing. Alternatively, mix the salad dressing with all the salad ingredients, except the rocket. Then arrange the rocket on a plate and add the mixed salad on top.
