Ingredients: "500 ml (2c) self-raising flour"; "125 ml (½c) brandy or whisky (plus extra to pour on after baking)"; "45 ml (3T) cocoa"; "1 kg fruitcake mix"; "75 g glazed cherries "; "125 ml (½c) canola oil "; "50 g whole almonds"; "2 eggs, whisked"; "500 ml (2c) strong coffee or chai-spiced rooibos tea (at least 6 bags) "; "1.25 ml (¼t) bicarbonate of soda "; "5 ml (1t) salt"

140°C. Line 6-8 takeaway containers (any shape,

but with lids) with baking paper and grease well with non-stick spray.
