Preheat the oven to 180°C. Grease a round loose-bottom baking tin with nonstick spray. 

1 Heat the oil in a pan and fry the onion and spinach until soft and wilted. Transfer to a colander and squeeze to remove most of the moisture. 

2 Add the spring onions, herbs and lemon zest.
