Quick grape trifle

  • 300g - black and red grapes
  • 30ml - honey
  • 60ml - orange juice
  • 125g - cream cheese
  • 30-45ml - icing sugar
  • - grated lemon rind
  • 30ml - granadilla pulp per glass
  • - sherry
  • 1 - ladyfinger per glass
  • 5ml - chopped pistachio nuts or pecan nuts per glass, for sprinkling

1 Put the grapes, honey and orange juice in a saucepan and boil for about 10 minutes or until syrupy.

2 To finish Mix the cream cheese, icing sugar and lemon rind until sweetened to your liking.

3 Put some grapes in each glass, then add the cream cheese mixture and finish with granadilla pulp.

4 Sprinkle a little sherry over each ladyfinger and add one to each glass. Sprinkle chopped nuts over.
