Sticky chilli chicken
Sticky chilli chicken

  • 125ml - white wine vinegar
  • 250ml - chopped fresh coriander or parsley, for garnish
  • 15ml - grated ginger
  • - sugar or non-nutritive sweetener
  • 3 - red chillies, deseeded and finely chopped
  • 85ml - soy sauce or tamari
  • 1kg - chicken pieces
  • 500ml - water

1 Combine the water, vinegar, sugar or sweetener, soy sauce or tamari, chillies and ginger in a large

pan. Simmer over medium heat for 3–5 minutes.

2 Add the chicken pieces, cover with a lid and cook for 35 minutes, turning occasionally.

3 Remove the lid and continue cooking for another 25 minutes, turning the chicken until it is cooked

through and coated in the sticky sauce. Scatter over the fresh herbs before serving.
