1. Divide the beef mince evenly into four heaps. Use your hands to form your mince into square patties as best you can. The patties don’t have to be perfect – just resembling squares will be good enough.

2. Use a hinged grid and braai the patties over hot coals for 8 minutes until crispy on the out­side and medium on the inside. Let the patties rest for a few minutes while you prep the rest of the ingredients.

3. Build the braaibroodjies: spread butter or olive oil on one side of each slice of bread (these sides will be facing outward in the assembled braaibroodjie). Pack half of these buttered slices sides down then start with a layer of chutney, then the patty, tomato, cheese and onion. Add salt and pepper. Close the braaibroodjies with the remaining slices of bread, buttered sides facing upward.
