
- 12 - chicken wings

- - salt and freshly ground pepper
- 5ml - each garlic powder, smoked or regular paprika and oregano
- 30ml - olive oil
- - juice of ½ lemon
- - GARLIC & CHILLI WINGS
- - salt and freshly ground pepper
- 4cloves - garlic, finely chopped
- 2 - chillis, chopped
- - finely grated zest of 1 lemon
- 30ml - melted butter
- - RED THAI WINGS
- 15ml - Thai red curry paste
- 60ml - mayonnaise
- - juice of ½ lemon
- - salt
- - TO FINISH
- - fresh basil
- - cooked chips
Soak 12 wooden kebab skewers in boiling water or keep 12 metal kebab skewers at hand. Preheat the oven to 200°C. Put a wire rack on a large baking sheet and grease with nonstick spray.
1 Divide the wings among three bowls.
2 Spicy wings Season one bowl of wings with salt and pepper. Mix the spices and sprinkle over the wings. Rub the wings with the oil and drizzle the lemon juice over.
3 Garlic & chilli wings Season another bowl of wings with salt and pepper. Mix the rest of the ingredients well and rub over the wings.
4 Red Thai wings Mix the curry paste, mayonnaise and lemon juice well and rub over the remaining wings. Season with salt.
5 To finish Thread each wing onto a kebab skewer and arrange on the prepared wire rack. Roast in the oven for 15 minutes, then turn the wings and roast for another 15 minutes or until done.
6 Arrange the wings on a serving plate and sprinkle the basil on top. Serve with chips.
